Own end-to-end F&B portfolio performance with a focus on menu economics, promotional planning, and cross-functional system ownership that unlocks revenue growth and profitability.

  • System Ownership & Post-Launch Analytics: own Zonal ePOS setup, menu modelling, reporting, and next-step recommendations.

Job Description

Own end-to-end F&B portfolio performance across menu economics, promotional planning, and system ownership with cross-functional execution and travel readiness.

  • Strategic Execution: Own KPI setting, project delivery, and senior-stakeholder presentations in partnership with the Senior F&B Product Manager.
  • Commercial Performance: Maximise revenue and gross margin on a £70m+ portfolio via menu development, pricing reviews, and value engineering with finance.
  • Insight & Innovation: Translate Wish surveys, customer panels, TripAdvisor, and competitor trends into actionable product recommendations.
  • Promotional & Pre-stay Planning: Deliver a promotional calendar with Finance and Brand, driving guest conversion through pre-stay communications across website, eCRM, and digital channels.
  • System Ownership: Manage Zonal ePOS (Aztec, Acquire, Enterprise Stocks, I-order) including supplier onboarding, product/recipe setup, menu modelling, and reporting.
  • Stakeholder & Supplier Management: Bridge Central and Field Ops, IT, PR, H&S, Training; manage strategic partners to meet SLAs and sustain innovation.
  • Post-Activity Analysis: Own performance reporting and provide what-next recommendations shaping the F&B agenda.
  • Travel Flexibility: Role requires significant national travel.
